Ginisang Ampalaya


Ingredients:

5 pcs ampalaya, sliced thin crosswise or otherwise
Cooking oil
Pound garlic then mince
5 ripe tomatoes, sliced
2 eggs, slightly beaten
onion, sliced
1/4 cup water
Salt to taste

Sauté garlic and onion in oil. Once the garlic is brown and the onion transparent. Add tomatoes. Halo. Add sliced ampalaya, cover and cook for 3 more minutes. Season with salt and some water, cover and cook for 2 minutes. Add beaten eggs.

You can cook/add optional ingredients like pork, beef, bagoong alamang, hipon, sotanghon, or broth cubes.

If you don't want it bitter try rubbing salt on ampalaya . I like its little bitternes, so I just put salt in the water where I wash Apalaya slices and let it stand for awhile, before I saute it.
